La Regina is made with pasteurized sheep’s milk and selected starter cultures produced in the old fashioned way. The best raw materials in conjunction with our traditional manufacturing procedures help make this cheese unique in discovering the tastes of times gone by. It is white in colour, crumbly and a broken Regina wheel gives off an intense aroma. The maturing time is from 90 to 120 days.

Ingredients
sheep's milk, selected milk enzymes, rennet, salt. Rind not edible.

serving tips

Perfect with black pepper prosciutto, drizzled with honey and chopped walnuts or hazelnuts, or with some sliced apple and two types of different honey such as acacia or chestnut honey. As typical Tuscan appetizer, try it with homemade bread, sliced sausage, anchovies with a garlic, chilli and parsley sauce. It is a fine accompaniment to full-bodied red wines.
