Barriccato alle Noci matures in barrels under nut leaves, that realise their oil and make this Pecorino an extraordinary pleasure for any cheese lovers. The air-tight barrels give our pecorino an intense aroma and a crumbly, bright white texture with a sharp but pleasant, nutty aftertaste.

Ingredients
sheeps' milk, selected milk enzymes, rennet, salt. Rind surface covered with nut leaves.

serving tips

This cheese can be enjoyed pure, but it certainly goes well with nuts in honey syrup such as walnuts, almonds or hazelnuts.
It is perfect with figs, sultana and chestnut or porcini mushroom slices with a drizzle of virgin olive oil.
Best pairing with dry white or dessert wines like Passito and Vin Santo.
